Significant Signifié
Located in Setagaya, Tokyo, Significant Signifié is led by Katsuei Shiga, a pioneer of low-temperature, long-fermentation techniques. Based on the themes of "bread that makes you healthy" and "bread for special occasions," their breads, made with carefully selected ingredients and baked with great care, including long fermentation, continue to captivate many. Until September 10th, they'll also be holding a limited-time event at the Isetan Shinjuku store, where they'll also be selling event-exclusive breads.

Baguette Levain (Full baguette 1,080 yen, Half baguette 540 yen)
It features large bubbles created by using a moist dough.

A must-try summer-only item is the "Yomogi Dainagon," made with mugwort from Yamagata. This moist, dense, mugwort-flavored bread features plump, large dainagon azuki beans peeking through. The striking cross-section is sure to bring a smile to your face. The soft mugwort aroma and the refined, salty sweetness of the dainagon azuki beans make it taste like a traditional Japanese confectionery.
The large Dainagon rice grains, which take up more than half of the surface area, are also visually satisfying.

Brown Rice Campagne (Full loaf ¥1,296 / Half loaf ¥648)
Exclusive to Isetan Shinjuku
If you're visiting the Isetan Shinjuku store, don't miss the limited-edition "Brown Rice Campagne." Brown rice, sunflower seeds, and pumpkin seeds are kneaded into the slightly tart campagne dough, creating a pleasant crunch with each bite, and a bitter, fragrant aroma. Packed with the sweetness and umami of brown rice, this "Japanese flavor" pairs perfectly with Japanese cuisine.
The fragrant aroma of brown rice and other ingredients generously kneaded into the dough matches perfectly with the acidity of the campagne.
