Located on the second floor of NEWoMan Takanawa MIMURE within TAKANAWA GATEWAY CITY, OGAWA COFFEE LABORATORY Takanawa presents a new kind of culinary destination. While it is rooted in coffee, its true focus lies in a broader question: how can experience itself be designed?

The answer, here, begins with numbers.

Across twelve interconnected laboratories—spanning coffee, bakery, chocolate, deli, wine, and more—each domain is guided by a set of “ideal values.” Temperature, time, and volume operate not merely as technical parameters, but as frameworks through which taste and perception are carefully constructed.

Coffee is extracted at 88–92°C, a narrow range where clarity and character are brought into focus. Chocolate is tempered between 45–50°C to achieve its precise texture and sheen. Pizza is baked at 550°C, allowing the dough to rise instantly while preserving its aroma and sweetness. Gelato, meanwhile, is flash-frozen at −196°C using liquid nitrogen, capturing the raw qualities of its ingredients.

Time, too, becomes a material. Bread is fermented slowly at 13°C, allowing flavor to develop with restraint and depth. The deli is conceived around the rhythm of 365 days—an accumulation of everyday choices. In the library, reading for 45 minutes a day expands into 273 hours of thought over time.

Even the serving of wine is calibrated: 125ml is considered the optimal volume to balance aroma and expression in a single glass.

These numbers are not arbitrary. They are the result of accumulated knowledge, experience, and dialogue with ingredients. More than specifications, they function as a philosophy—an invisible structure that shapes what we ultimately perceive as taste.

What distinguishes this space is that these processes are made visible. Roasting, extraction, fermentation, and cooking unfold in an open environment, allowing visitors to engage not only with the final product, but with its formation. Through a cross-operational system, experiences from different laboratories can be combined, encouraging a fluid movement across categories.
