Pâtisserie Sadaharu Aoki Paris will be selling 11 types of chestnut sweets, including four new varieties, at its five directly managed stores in Japan from August 21st.


New sweets making full use of European and Japanese chestnuts

This year's new chestnut sweets include a kouign amann and ice cream made with European chestnuts, and a tart and macaron made with Japanese chestnuts, which are rarely used in French pastries. "Kouign Marron" combines the delicious butter and caramel flavor of kouign amann, a traditional pastry from the Brittany region of France, with a paste that captures the sticky texture and rich flavor of European chestnuts. The marriage of the three ingredients, butter, caramel and chestnut, which go well together, is a delicious treat that is only possible in autumn. When we think of "chestnuts" in French pastries, we think of European chestnuts (marrons), but Aoki, who specializes in French pastries that incorporate Japanese ingredients using the sensibilities of a Japanese pastry chef, also makes noteworthy "Tarte Wagri Matcha" and "Macaron Wagri," which use Japanese chestnuts. Both are delicious as French pastries because the "dough" of tarts and macarons, which are the foundation of French pastries, is well-made. They are masterpieces that are full of Aoki's individuality.

A luxurious delicacy that combines kouign aman, a traditional pastry from the Brittany region of France, with chestnuts. The mellow aroma of French fermented butter, the rich taste of caramel, and the rich flavor of chestnuts come together to create a delicious trinity. One of the charms is the contrast between the crispy exterior and the texture of the chestnut paste hidden inside. This is an autumn delicacy that you can only find at Isetan Shinjuku.

[New product] Tarte Wagli Matcha 918 yen (tax included)
The new "Tarte Wagli Matcha" is a flaky tart crust filled with plenty of Japanese chestnut cream and layered with matcha cream. The star of this tart is the Japanese chestnut cream, made using a special manufacturing method. The cream has a soft, fluffy texture that allows you to enjoy the natural flavor of the ingredients, and the gentle taste of matcha and the light texture of the tart create an exquisite marriage.

[New product] Waguri macaron 324 yen (tax included)
A new flavor, "Japanese chestnut," has been added to Aoki's specialty "macaron." The cream, which features Japanese chestnut and butter, is simple in flavor, which brings out the deliciousness of the Japanese chestnut to the fullest.

Fondant aux Marrons 432 yen (tax included)

Based in Paris, Sadaharu Aoki is one of the most talked-about pastry chefs in the world today. He has a history of receiving various awards, including the Best Pastry Chef of France and the Paris City Hall Prize.
